1 3.3-lb can M&F Plain Light Extract
1 lb 20ºL Crystal Malt
1 oz Kent Goldings Pellets, 6.0% (55 min)
2 lbs Wildflower Honey (steep)
2 lbs Orange Blossom Honey (steep)
1 lb Tupelo Honey (steep)
2 packs Lalvin 71B-1122 Wine Yeast
1 cup M&F Plain Light Dry Extract (priming)

21 days secondary (glass)

  • Crush grains, steep at 150º-155º for 30 minutes. Add honey after boil and let steep for 10 minutes before starting to cool the wort.
  • This brew ferments exactly like what it is - a cross between beer and mead. Be prepared for a long secondary and a few months of aging until it hits its peak. It's worth it, though - this got rave reviews from everyone who tasted it.
