notes |
| I got the cherries from Trader Joe's. Each jar of cherries
weighs 24 oz with juice (12 oz drained). I doubt Montmorency is really
a good replacement for Belgian Scharbeek cherries, but I can't find those. |
| I make my own Belgian spice mix, which I won't give away
here. It has eight spices, which I hand-grind with a mortar and pestle. |
| This was my first attempt at this recipe. One big lesson
I learned was not to use a plastic primary. The next beer tasted
strongly of the spices. I also got everything out of balance - I will use
another jar of cherries and less spices next time, and try to get more
"beer" flavor. |
