- Corsely chop lemon balm (about 1.5-2 double handfuls)
and place in secondary before racking.
- The finished beer smelled almost exactly like Lemon Pledge.
It had that taste in it, but a really nice herbal flavor (that was completely
absent from the aroma) was stronger. It was a great combination, and the
amount of lemon balm was perfect. I really wish I knew exactly how much
(frozen after it was picked fresh out of a friend's garden) I used.
