2 packs Lalvin 71B-1122 yeast

  • Pasteurize honey at 160º-165º for 30 minutes.
directions
1.124 OG
1.043 FG
10.6 % (v/v)
37 days primary (glass)
3 months secondary (glass)
2 months tertiary (glass)
numbers
The honey is from:
Lunsford's Silver Hill Bee Farm
Bealeton, VA
540-439-0743
When I racked to secondary, it was at 1.051. Three months later, it was at 1.046, so after I racked to tertiary, I pitched two more packs of yeast. Fermentation seemed to pick up, and then a month later, it dropped clear. But it only went down to 1.043, which is a little disappointing. I think I will use K1V for meads without extra nutrients from fruit next time.
