1 3.3-lb can M&F Plain Extra Light Extract
3 lbs Laaglander Plain Light Dry Extract
1 lb Caravienne (24ºL) Malt
1 oz Cluster Pellets, 7.0% (55 min)
Wyeast 1056 American Ale
7 3/4 lbs Strawberries (secondary)
1 cup M&F Plain Light Dry Extract (priming)

3 days primary (plastic)
1 day secondary (glass)
9 days tertiary (glass)

  • Crush caravienne and steep 160º-170º for 30 minutes.
  • Juice strawberries and add 1 quart water to the juice. Pasteurize at 170º for 30 minutes. Pour in secondary and rack on top. Rack off the next day, or when fermentation subsides.
  • Unfortunately, this got infected. It was turning out to be a great beer, though, and this recipe should work well.
