- Crush caravienne and steep 160º-170º for 30
minutes.
- Juice strawberries and add 1 quart water to the juice.
Pasteurize at 170º for 30 minutes. Pour in secondary and rack on top.
Rack off the next day, or when fermentation subsides.
- Unfortunately, this got infected. It was turning out
to be a great beer, though, and this recipe should work well.
